    Noodles in Bone Broth

    INGREDIENTS
    • Bone broth 400 ml
    • rice vermicelli 1/2 packet
    • soy sauce 1 ½ tsp
    • fish sauce ½ tsp
    • chilli flakes ½ tsp
    • garlic 1 clove
    • ginger ½ inch
    • mushrooms 4-5
    • sweet pea a handful
    • spring onions 2 tbsp (chopped)
    • sprouts 2-3 tbsp
    • salt ¼ tsp
    • black pepper
    • sesame seeds 1tsp
    METHOD
    1. Cook the rice vermicelli as per instructions on the packet and keep aside.
    2. Boil the sweet peas for 2-3 mins and immerse them in an ice cold water immediately.
    3. Heat some oil in a pan and saute garlic and add mushrooms.
    4. Once the mushrooms are done set them aside.
    5. Add a little oil to the same pan and saute the garlic ginger and slowly add the broth.
    6. Add in chili flakes, black pepper, soya sauce, fish sauce and gently heat them.
    7. For assembling: place the noodles in a bowl. Pour the broth. Top with sauteed mushrooms, sweet peas, sprouts, spring onions and toasted sesame seeds.

    When I first started hearing about the bone broth craze last year, I set about making myself some.

    It took all day to simmer that organic chicken and although my kitchen smelled great, I ended up with about three servings.

    No matter how good it might have been for my gut health, I didn’t have enough to see any improvements in and I wasn’t about to make any more.

  6. How the latest Hollywood trend of bone broth is catching on in the UAE

    Can you still call something a “food craze” if it has been around since the Stone Age?

    Bone broth, which is all the rage in Hollywood and is catching on in the UAE, is essentially the same homemade soup your grandma – and generations before her – might have made from marrow bones, with assorted vegetables and herbs, although this latest variation simmers on the hob for a little longer (up to 48 hours).

    Doctors and celebrities, including Gwyneth Paltrow, Kobe Bryant and Salma Hayek, tout it as a cure-all to help you attain radiant skin, weight loss and shiny hair.

    Now, The Clean Living Company, launched this year by Britons George Ball and Dean Henry, is cooking up bone broth commercially in Dubai.The pair have enlisted the services of chefs from the Maine Oyster Bar & Grill in JBR to prepare batches in their kitchen.

    I point out to Henry that his concoction looks like something my Dad makes. “Mine too,” he says, to my surprise. “I’m from Caribbean heritage, and my dad used to cook us a lot of goat stew. The bones were left in the stew and cooked over a long time, and that does offer amazing benefits.

    “The difference is that with bone broth, you’re really focused on dense, thick bones and also bone joints that contain the collagen and other nutrients we’re targeting.”

    Bone broth is 90 per cent water, which is simmered on a low heat. For maximum benefits, says Henry, it should not be boiled at all. He admits he is not a nutritional expert but has been nurturing a passion for healthy products since his daughter, Evie, now 8, was born with a severe nut allergy.

    “Everybody was telling me that she couldn’t be cured, which I found very hard to swallow,” he says. “I became interested in researching what goes into food. I went back to the UK last summer and noticed a lot of information on bone broth and its benefits, and I started drinking quite a lot of it. Then I came back to Dubai and realised that we just couldn’t get it anywhere here, so that’s when I decided to start making it.”

    To start to see benefits quickly, Henry recommends a 21-day bone broth diet. This consists of following a healthy Paleo menu, with two semi-fasting days each week, on which you drink four to six servings of bone broth.

    American doctor Kaayla T Daniel, co-author of the book Nourishing Broth: An Old-Fashioned Remedy for the Modern World, published in 2014, says humans have been making bone broth since before making pots to cook in.

    “They cooked up their first soups in animal skins and turtle shells,” she says. “It’s true that broth went out of fashion for a while with the advent of processed, packaged and fast foods, but now it’s coming back.”

    Today, broth is a part of the “real food”, “whole food” and “slow food” movements and also of “nose-to-tail eating”, an idea popularised by chef Fergus Henderson in London.

    “Many of those people think it’s ‘Paleo’ to focus on steaks, chops and muscle meats but, in truth, our ancestors ate all parts of animals, including organ meats, like liver, and broth made from the carcass,” says Daniel.

    Dubai-based Yolande Gabriel, an Australian flight attendant and fashion designer, is a big fan of bone broth. “My friend’s child suffers from autism and she put her son on the Gut and Psychology Syndrome diet, which is a Paleo diet including bone broth,” she says. “His results were astounding and the whole family lost an incredible amount of weight, and their sleep and skin had never been better.” She now takes at least one cup every day. “I notice huge benefits,” she says. “I’m not hungry when I have my cup of bone broth; my digestion is so much better and also my skin is a lot more hydrated.”

    Henry says he hopes to step up production of bone broth to meet the demand he anticipates during the new year dieting season. Delivery is limited to Dubai initially, but he hopes to expand to Abu Dhabi soon.

    For those living in the capital, health-conscious eatery Nolu’s Cafe also serves up bone broth at branches in Galleria Mall at Al Maryah Island and Al Bandar, with prices from Dh20 a bowl.

    Henry and Ball are approaching companies to ask staff to take part in a “21-day biggest loser challenge”.

    “We’re asking companies with a minimum of 10 employees to have a competition between them and see who can lose the most weight, through a clean bone-broth diet,” Henry says.

    Elisha Udoh from Abu Dhabi, a Briton who writes the health blog The Happy Place Journal and who works as fitness manager at The Club, is looking forward to trying bone broth. She is a firm believer in the healing power of food. After recently suffering a second-degree burn, she changed her diet to get the key ingredients to help her skin recover.

    “This included vitamin C, high protein and foods high in antioxidants,” she explains. “My consultant was amazed with the healing. The benefits of bone broth are fantastic, especially for busy people with busy schedules that need support through their diet. It’s not one to serve your family every day, as variety is key when it comes to a healthy, balanced diet. But it will for sure be up there on my weekly meal planner.”

    How do you make it?

    There are many ways to make bone broth, but The Clean Living Company makes its version with marrow bones from organically-raised, 100 per cent grass-fed cows or organic free-range chicken bones.

    According to Daniel, it depends on the individual, the rest of their diet, their lifestyle and any health challenges. “Some people report they start feeling happier and well-nourished right away,” she says. “In terms of restoring health and reversing disease, people tend to start noticing a difference in a few months. It’s not a quick fix or a cure-all, so people should expect to continue on a nourishing real-foods diet that includes broth, soups and stews.”

    Are there any potential risks or downsides?

    Some people have extreme sensitivity to glutamine, an amino acid that we all need for good health. Daniel recommends that those who are sensitive start out slowly and eat a short-cooked, rather than long-cooked, broth. “The short-cooked broth is lower in glutamine, but also lower in all the other valuable nutrients,” she says.

The ‘work hard play hard’ attitude is very much apparent, particularly in Dubai, and although someone may have eaten well during the week, this can be ruined by a blowout at brunch at the weekend. In such a high stress environment, people often need to find a release, and unfortunately may turn to unhealthy meal/drink choices to do so.

    Dean: Cost and education are also two main factors to take into consideration. Fast food is often a lot cheaper to buy, and some unfortunately haven’t been educated on the disadvantages of these cheap eats. If the number of people purchasing organic ingredients increased, the cost would be brought down, making healthier choices more accessible to the masses.

    Does The Clean Living Company have plans to expand outside of the region?

    Dean: There is a definite plan for international expansion in the foreseeable future. We now have the beauty of the Internet, and the world as our market. We want to ensure we get it right in Dubai first, and then educate the GCC region – as well as the rest of the world – on the benefits of leading a healthy lifestyle, and how good Bone Broth is for you!

    What are your backgrounds and how did the company start?

    George: We both grew up with strong sporting backgrounds, as well as the desire to succeed. Dean worked for the likes of IBM before moving into Real Estate, while I was a stockbroker. We initially met through a mutual friend in the UK, and once we had relocated here, re-connected and discussed the possibility of starting a business. Because neither of us could get our hands on bone broth – which we regularly had in the UK – we saw a great gap in the market…

  8. 60-second interview: George Ball

    What inspired you to set up The Clean Living Company?

    We set it up to solve a personal problem and, as health fans, we were familiar with the benefits of bone broth. We found it a huge challenge to get our hands on it here — and going back to the UK to fill up our suitcases with it wasn’t ideal, so we decided to start making it here so that others could also have access to it.

    What do you like most about your job?

    It’s very rewarding to be able to make a huge difference in peoples’ lives — we have received so much positive feedback and those people have been encouraging their family and friends to try the broth too. There’s no better feeling than that!

    How did you start working with Maine’s head chef?

    We met Liam [Breen] through a mutual friend of Dean’s; we were searching for someone who would represent the product, and Liam supports health and fitness. He also has the right image for The Clean Living Company and understood our vision from day one. He’s young, fresh, ambitious and hugely talented.

    Any expansion plans for the business?

    We have big plans to expand; we would like to provide products to our clients that will increase the effects of bone broth. Although we are working locally, our goal is to sell internationally.

    Besides it’s amazing taste and culinary uses, broth is an excellent source of minerals and is known to boost the immune system (chicken soup when you are sick anyone?) and improve digestion. Its high calcium, magnesium, and phosphorus content make it great for bone and tooth health. Bone broth also supports joints, hair, skin, and nails due to its high collagen content. In fact, some even suggest that it helps eliminate cellulite as it supports smooth connective tissue.

    It can be made from the bones of beef, bison, lamb, poultry, or fish, and vegetables and spices are often added.

    Why Broth?

    Anyone who has read Gut and Psychology Syndrome knows the many benefits of bone broth and how it can improve digestion, allergies, immune health, brain health, and much more.

    What isn’t as well known is that broth can help reduce cellulite by improving connective tissue, increase hair growth/strength, improve digestive issues and remineralize teeth.

    Broth is also helpful to have on hand when anyone in the family gets sick as it can be a soothing and immune boosting drink during illness, even if the person doesn’t feel like eating.

    Broth is very high in the amino acids proline and glycine which are vital for healthy connective tissue (ligaments, joints, around organs, etc). The Paleo Mom has a great explanation of the importance of these two amino acids:

    In addition, glycine is required for synthesis of DNA, RNA and many proteins in the body. As such, it plays extensive roles in digestive health, proper functioning of the nervous system and in wound healing. Glycine aids digestion by helping to regulate the synthesis and of bile salts and secretion of gastric acid.  It is involved in detoxification and is required for production of glutathione, an important antioxidant. Glycine helps regulate blood sugar levels by controlling gluconeogenesis (the manufacture of glucose from proteins in the liver). Glycine also enhances muscle repair/growth by increasing levels of creatine and regulating Human Growth Hormone secretion from the pituitary gland. This wonderful amino acid is also critical for healthy functioning of the central nervous system. In the brain, it inhibits excitatory neurotransmitters, thus producing a calming effect. Glycine is also converted into the neurotransmitter serine, which promotes mental alertness, improves memory, boosts mood, and reduces stress.

    Proline has an additional role in reversing atherosclerotic deposits. It enables the blood vessel walls to release cholesterol buildups into your blood stream, decreasing the size of potential blockages in your heart and the surrounding blood vessels.  Proline also helps your body break down proteins for use in creating new, healthy muscle cells.

    What Kind of Broth?

    Homemade, nutrient dense bone broth is incredibly easy and inexpensive to make. There is no comparison to the store-bought versions which often contain MSG or other chemicals and which lack gelatin and some of the other health-boosting properties of homemade broth. If you’re short on time, I’d recommend Kettle and Fire’s grass-fed bone broth because it is a gelatinous and made with natural ingredients.

    In selecting the bones for broth, look for high quality bones from grass fed cattle or bison, pastured poultry, or wild caught fish. Since you’ll be extracting the minerals and drinking them in concentrated form, you want to make sure that the animal was as healthy as possible.

    There are several places to find good bones for stock:

    • Save leftovers from when you roast a chicken, duck, turkey, or goose (pastured)
    • From a local butcher, especially one who butchers the whole animal
    • From local farmers who raise grass fed animals (ask around at your local Farmer’s Market)

    This recipe for broth is my favorite and is an adaption of the recipe in Nourishing Traditions.

    How to Use Bone Broth

    Homemade Broth/Stock can be used as the liquid in making soups, stews, gravies, sauces, and reductions. It can also be used to saute or roast vegetables.

    Especially in the fall and winter, we try to drink at least 1 cup per person per day as a health boost. My favorite way is to heat 8-16 ounces with a little salt and sometimes whisk in an egg until cooked (makes a soup like egg-drop soup).

    In times of illness (which doesn’t happen often) we will usually just drink bone broth until we start feeling better as it supports the body but is very easy to digest so the body’s energy can go to healing. In cases of stomach bugs or vomiting, bone broth often calms the stomach very quickly and helps shorten the duration of the illness.

    If you aren’t already, make bone broth a regular part of your kitchen routine. It’s health boosting, inexpensive and easy… you can’t afford not to!

    How to Make Bone Broth

    Ingredients
    • 2 pounds (or more) of bones from a healthy source
    • 2 chicken feet for extra gelatin (optional)
    • 1 onion
    • 2 carrots
    • 2 stalks of celery
    • 2 tablespoons Apple Cider Vinegar
    • Optional: 1 bunch of parsley, 1 tablespoon or more of sea salt, 1 teaspoon peppercorns, additional herbs or spices to taste. I also add 2 cloves of garlic for the last 30 minutes of cooking.
    • You’ll also need a large stock pot to cook the broth in and a strainer to remove the pieces when it is done.
    Instructions
    1. If you are using raw bones, especially beef bones, it improves flavor to roast them in the oven first. I place them in a roasting pan and roast for 30 minutes at 350.
    2. Then, place the bones in a large stock pot (I use a 5 gallon pot). Pour (filtered) water over the bones and add the vinegar. Let sit for 20-30 minutes in the cool water. The acid helps make the nutrients in the bones more available.
    3. Rough chop and add the vegetables (except the parsley and garlic, if using) to the pot. Add any salt, pepper, spices, or herbs, if using.
    4. Now, bring the broth to a boil. Once it has reached a vigorous boil, reduce to a simmer and simmer until done.

      These are the times I simmer for:

      • Beef broth/stock: 48 hours
      • Chicken or poultry broth/stock: 24 hours
      • Fish broth: 8 hours
    5. During the first few hours of simmering, you’ll need to remove the impurities that float to the surface. A frothy/foamy layer will form and it can be easily scooped off with a big spoon. Throw this part away. I typically check it every 20 minutes for the first 2 hours to remove this. Grass-fed and healthy animals will produce much less of this than conventional animals.
    6. During the last 30 minutes, add the garlic and parsley, if using.
    7. Remove from heat and let cool slightly. Strain using a fine metal strainer to remove all the bits of bone and vegetable. When cool enough, store in a gallon size glass jar in the fridge for up to 5 days, or freeze for later use.

    Kourtney Kardashian is revealing the secrets of her insanely strict diet that only allows her drink water and bone broth for 24 hours.

    Kourtney told fans about her detox diet in a new feature on her official app, where she revealed that she keeps in shape by fasting for 24-hours a week and keeps her body in “a state of ketosis” by only eating three very strict meals a day.

    Revealing that she’s been following the extremely strict detox diet on and off for the past few months, Peoplereported that the reality star detoxes for one day and then eats three meals a day which are low in carbs but high in both protein and fatty acids.

    Kardashian told her app subscribers that her detox diet is so strict that she has can’t each much fruit when she’s in full-on diet mode and then has to wait between 14 and 16 hours after she ate dinner to have breakfast the following morning.

    But it sounds like that 14 to 16 hours overnight is nothing for the Keeping Up with the Kardashians star.

    The mom of three also revealed in her app post that she takes even more drastic measures when it comes to the fasting part of her diet.

    Kourtney told fans that she fasts almost completely for a 24-hour period during the detox, during which time she’s only allowed to consume bone broth and water.

    “I’m not going to sugarcoat it, this detox is difficult,” Kourtney told her fans of keeping herself in shape and following her diet plan, admitting that she has to stay out of the kitchen during her detox days because there’s strictly no snacking between meals.

    But while Kourtney’s very strict diet seems pretty crazy, there’s no doubting that it’s working.

    Kardashian has been showing off her toned body in several barely there and thong bikinis over the past few weeks as well as giving fans a little more than they bargained for with a handful of completely naked photos she’s posted of herself across social media.

    In addition to showing off her backside on Instagram in numerous butt cheek exposing thong bikinis recently – all of which caused serious backlash from fans – Kim Kardashian’s big sister also got completely naked for a risqué photo shoot during a vacation.

    Keeping Up with the Kardashians cameras were around to see the mom of three get completely naked and pose in a swimming pool for a professional nude photo shoot while on vacation in Costa Rica with her famous family members earlier this year.

    Kourtney got completely nude and put everything on display for the cameras as she struck poses in the pool and then sat on a large rock while in the nude as her sisters Kim and Khloe Kardashian and half-sister Kylie Jenner looked on and shouted encouragement to the star from the sidelines.
